#HEBack2School Meal Maker Challenge: Peanut Butter Flautas for Breakfast

Do you know how long I've been waiting to start posting my recipes for the 2011 Meal Maker Challenge? I'm so excited to have been invited by H-E-B and Conagra Foods to participate for the second year in a row and anxious to bring you guys some REALLY awesome easy recipes that you're family is going to love.

Each week, we have a "secret ingredient" we must use in each recipe. This week, it's Peter Pan Peanut Butter. I know what you're thinking This woman has a child allergic to peanuts. How is she going to cook with peanut butter? Well, you would be right. My youngest IS allergic to Peanut Butter, but we went around this by making the same dish with a hazelnut butter just for him and we enjoyed the peanut butter dish. So, without further ado, I bring you a recipe for Peanut Butter Flautas, perfect for breakfast or an after school snack.


Flauta in Spanish, literally means flute. I've seen them made with both corn or flour tortillas and stuffed with chicken or beef with different types of cheeses. I, thought it would be perfect filled with creamy Peter Pan Peanut Butter. Check it out!

Breakfast Idea
Peanut Butter Flautas

Ingredients:

You won't need much (and that's the beauty of it). I'm all about simplicity during a typical school week. I used coconut oil, from Tropical Traditions, to give it a sweeter taste, but vegetable oil works great as well. I'm very picky about my tortillas, so I usually purchase the H-E-B tortillas that you have to cook beforehand, but you can skip that step and buy them already cooked.

  • Peter Pan Peanut Butter
  • Powdered Sugar
  • Flour Tortillas
  • Honey
  • Coconut Oil


Directions:

1. Spread Peanut Butter on three quarters of the tortilla.


2. Roll your tortilla as tightly as you can and place on a plate.


3. Pile your, tightly rolled, flautas on a plate. You can easily go from rolling straight to the frying pan, but I'm a little OCD when cooking. I don't want to burn the flautas while I'm trying to roll more. So, if you're like me, get them all rolled first so you can concentrate on frying afterwards.


4. Heat 1 cup of Coconut Oil (or Vegetable Oil) in a pan. Once hot, use tongs to slowly place your flauta in the frying pan. The tongs will keep each flauta closed until the hot oil can "set" it.


5. Fit as many flautas you can into your pan. When cooking other foods, I don't like to crowd the food I'm frying, but flautas are ok to crowd. It keeps them closed and it helps you get breakfast on the table faster.


6. After your flautas are cooked to a golden brown, carefully pull them out and place them on a plate lined with paper towels. This will ensure any extra oil is absorbed off your flauta.


7. Place desired amount of flautas (My kids ate about three each, they're very filling) on a plate, shake a little powdered sugar on top, and drizzle with honey.


Tips for making Peanut Butter Flautas

While, these were SUPER easy and quick to make (it took me like 20 minutes), here are a few tips when you make yours.

  • Instead of drizzling with honey, try dipping in pancake syrup. 
  • If your child is allergic to peanut butter, you can also use soy butter or hazelnut butter.
  • Add-in's can really get your kids excited such as coconut, chocolate chips, or even plantains.
  • Try rolling it in a mixture of cinnamon and sugar when it first gets out of the frying pan.
  • If you're having a hard time keeping the closed while frying, try using a toothpick to fasten.
